Summer Squash Casserole

Ingredients

3 medium summer squash, sliced 1/4 in thick
3-4 tomatoes, diced
2-3 small onions, diced
1 green pepper, diced
1/2 head cabbage, coarsely chopped
1 clove garlic, minced
8 oz mozzarella cheese, shredded
fresh herbs to taste (I used 1/4 c basil)
salt and pepper to taste

1/2 c fresh bread crumbs
2 T butter


Preparation

Combine all ingredients except bread crumbs and butter in large casserole dish.

To make fresh bread crumbs, whiz 1-2 pieces of bread in food processor. I often chop up various kinds of seeds in with my bread crumbs, too. Melt butter in skillet or microwave and stir in bread crumbs, stirring to coat evenly.

Sprinkle bread crumb mixture on top of casserole. Bake uncovered at 400 degrees for 45 minutes.
