Wild Garlic Soup

Ingredients
2 oz. butter
10 oz. peeled potato
5 oz. onion
2 cups wild garlic (bulbs and leaves)
1 tsp. salt
freshly ground pepper
2 pints home-made chicken stock
4 fl.oz.cream
Wild Garlic Flowers!
Preparation
Melt the butter in a heavy saucepan. When it foams, add the potatoes, onions and wild garlic and toss in the the butter until well coated. Sprinkle with salt and pepper. Cover and sweat on a gentle heat for 10 minutes. Add the stock and cook until the vegetables are soft. Puree the soup, taste and adjust the seasoning. Add a little cream to taste. Serve, sprinkled with a few wild garlic flowers! Yummy!
