Indian Spiced Cabbage & Tomatoes

Ingredients

1 Head cabbaged chopped
1 large tomato
1-2 tbsp garam masala
1/2 tsp curry powder
2 tbsp tomato paste
1/2 C water
Salt
Olive oil


Preparation

Place approx 2 Tbsp olive oil in a large saute pan or dutch oven. Heat over medium heat, once it is warm add garam masala and curry powder. Cook just until fragrant. Add cabbage and water, stir and cover. Cook until cabbage starts to wilt. Add chopped tomato and tomato paste, stir to combine. Cook until cabbage and tomato are cooked completely. Salt to taste.

Serve over brown basmati rice.
