Meza Lunas

Ingredients

4 whole wheat tortillas (you can use white flour)
about 1 cup Mozzarella cheese
spinach
1 green garlic, white and light green parts
2-4 chopped, oil-packed, sun-dried tomatoes
10 leaves of parsley
1 roasted chicken breast (optional)


Preparation

Preheat oven to 400. Place about a cup cheese (more if not using chicken), a handful of spinach leaves, Green Garlic (cut into large chunks), parsley and chicken in a food processor. Pulse until well blended and in small pieces. Place mix in a mixing bowl and add chopped tomatoes. Lightly coat a cookie sheet with oil, place 2 tortillas on sheet. Spread 1/2 mixture on each tortilla, top with remaining tortilla lightly spray with oil. place in oven for approx 10-15 min or until cheese is melted and tortilla is crispy.

Remove and cut into quarters. Serve with a fresh green salad lightly dressed with italian dressing.

I tried your recipe last night and loved it - thanks Jaimelee! My daughter and son-in-law looked hesitant (I think because I mentioned spinach) but they tried it and loved it. I made it without chicken, and the flavors went well with an Italian pasta meal.
