Smoked Salmon and Beet Salad

Ingredients
Per person
3 ounces of flaked smoked salmon
2 small (or 1 large) beets (Two colors is nice)
Bibb lettuce (or salad mix)
Cucumber Dill Yogurt dressing (below)
Cucumber Dill Yogurt Dressing
one small cucumber, peeled, seeded and shredded- need about 1 part cucumber to three parts yogurt
1 cup plain yogurt
1/4 cup chopped fresh dill
1 clove of garlic, minced
salt and pepper
Mix all together.
Preparation
Roast beets in 1/4" water in preheated 425 degree oven until easily pierced with knife. When cool peel and slice into 1/4" slices. Layer lettuce then flaked salmon then beets on plate. Drizzle with dressing.
