main dishes
1 lb link sausage, chopped (any variety works)
1 1/2 large bunches fresh greens, roughly chopped- (we used a mix of kale, beet greens and cabbage)
2 medium summer squash, diced
1 green pepper, diced
1/4 cup green onions, chopped
2 cloves garlic, minced
1 T olive oil
1/2 t red pepper flakes
2 cups water or vegetable broth
1 cup medium grain brown rice
Bring water or broth to a boil, add rice. Simmer covered 45 minutes.
In separate large skillet, lightly brown sausage. Add olive oil, onions and garlic and saute until soft. Add greens,squash, green peppers and pepper flakes, turning to coat with oil. Cover and cook an additional 10-15 minutes.
Spoon sausage and greens mixture over serving of rice. Serves 4.
*This is a quick, simple dish that is easily substituted with various seasonal vegetables.
